Ingredients:
Potatoes, peeled and diced – 4 cups
Milk (whole milk works best) – 4 cups
Sharp cheddar cheese, shredded – 2 cups
Butter – 2 tablespoons
Salt and black pepper – to taste (optional)
How to Make 4-Ingredient Cheddar Potato Soup:
Step 1: Cook the Potatoes
Add the diced potatoes to a medium pot and cover with water. Bring to a boil, then lower to a simmer and cook for 12–15 minutes, until the potatoes are fork-tender.
Step 2: Mash
Drain the potatoes, reserving about ½ to 1 tablespoon of the cooking liquid in the pot. Gently mash the potatoes, leaving some small chunks if you like a bit of texture.
Step 3: Add Butter
